From Cabbage To a Culinary Delight
In 2004, Bojagi proprietor Choi Mi-Kyung discovered Gom-Bo cabbage, a staple crop indigenous to this region. Inspired by the cabbage’s unique taste and texture, she developed Gom-Bo cabbage Doenjang (soybean paste) and beverages, for which she received a patent. After long considerations on how to utilize this special ingredient further, she decided to open Bojagi, a restaurant offering delectable dishes with Gom-Bo cabbage as the main ingredient.
